Infamously known as the green fairy, absinthe is a licorice-like anise-flavored spirit extracted from wormwood and other botanicals. It has a high alcohol content of 90 to 148 U.S. proof and rose to popularity during La Belle Époque in France after its birth in Switzerland in the late 18th century. By 1915, absinthe was banned in the United States and most of Europe due to its possibly hallucinogenic properties. Then came its revival. Today, the green fairy flies, with adventurous drinkers from around the world under her spell.

The drink preparation itself is a mesmerizing show, but with Smalls’ unique retro interior and beautiful Wednesday Jazz, drinking absinthe becomes an artistic experience. Watch as the absinthe-soaked sugar cube atop the slotted spoon is set on fire, caramelized sugar melting into your drink below. Tip the spoon and enjoy the flicker of greenish flames dancing in your glass before extinguishing the fire with a shot of cold water. Now a milky color, your drink is ready to add dance to your moves and song to your tunes.
